I watched an episode of Ace of Cakes, and they were delivering a bunch of buckets of fondant to him. The Food Network blurred out the brand of fondant icon_sad.gif

Does anyone happen to know which one he uses?

If I remember correctly one of the girls from Duff's shop posted on here that they use Satin Ice.

Duff was on another forum in the chat room and as I recall he said Massa Grischuna from Albert Uster Imports. I know on the show the tubs I have seen don't look like Satin ice but you can't really read the label either.

I remember as well hearing that they use Satin Ice. I don't think they can really show the labels of anything on the show though..... like all the Food Network shoes - most of the labels are changed - I saw an episode about "behind the scenes" of Food TV and they were showing how they re-do labels to still look like labels, but not be any specific product......

Anyway - Satin Ice.

It looks most like the 3rd one clockwise. I just remember it wasn't SI, unless it was the already colored pink one which would explain the pink writing on the tub?

I know it wasn't that squarish one unless the biggest size they make comes in a tub-like shape. Could we e-mail them?

It looks a lot like the Satin Ice bucket, but you are right...I remember the writing being in pink. Hmmmm.... does anyone have it recorded? icon_smile.gif

Whoops, I meant "counter clockwise".


Don't they color their fondant? I also remember the buckets weren't 100% white, they were more of a cream/yellowish color.

Mary Alice told me that they use chef's warehouse and albert uster for their fondant and chocolate supplies.

I don't think Duff uses Satin Ice fondant. The buckets that were delivered look exactly like Carma. I know for sure he uses Carma Modeling Paste shown here:

I think the fondant is the same brand as the modeling paste. Collette also uses Carma fondant she stated this in a class I took.

I still think Albert Uster. He is a celebrity chef for that company and does charity work for them too.

Yes, that the brand of fondant he use at his shop; he also uses the Carma Modeling Pasteby Massa too. I'm not sure whether Albert Uster sells to the general public or not so these may or may not be available to those that are not licensed with proper business documentation. BTW, they are pretty expensive at least the modeling paste is.

The other night I was watching his show (the one with the owl wedding cake,jeep cake,and rat!) anyhoo, I remember seeing a Satin Ice container in the background when Duff was talking to his "fondant guy". The reason I remember is b/c for some reason I was suprised he used Satin Ice!

We have an Albert Uster shop in our area in San Leandro, California. They have a $100.00 minimum order on all orders. That is why I order so seldom, I rarely need $100.00 of product.

Massa Grischuna (Albert Uster Imports) is my most favorite kind of fondant. It tastes wonderful and is really great to work with. I learned about it when I took a class from Colette Peters a couple years ago ... it's the kind of fondant that she used in the class. Here's the link to buy it from Albert Uster Imports:

In various epsiodes I have noticed 3 brands of fondant at Charm City. Satin Ice, Boston Gourmet, and Ballina (the one with Pink on the label)

The buckets I see the most are definitely Satin Ice.
