Can You Freeze Sweetex?

Hello to all, does anyone knows if it's ok to freeze shortening Sweetex? I just found out that my local Cash & Carry sells sweetex in bulk. I believe is 50lbs for around $60 and it's a great price but, being a hobby baker it would last me a long time. So, I'm wondering if I could freeze so that it stays fresh.

Wow what a great deal. I believe I have read on here that others divide it into batches and freeze then take it out as needed.

That really is a great price. Last time I got Sweetex I paid $100 for 50 lbs. You could divide it and refrigerate it. I don't know how freezing would affect it in the long run.

I divide my Sweetex and freeze it. Wrap it very well in plastic wrap, then freeze for a day or two and then I take the smaller packages and put them in a Food Saver bag and seal. I have done this for a long time and have had no problems when I thaw it and use it in my BC. I know that there are quite a few people on CC that freeze their Sweetex also. It keeps for many months.

I also read a recent post that you can freeze hi-ratio shortening. Like you, Rosie2, I'm a hobby baker. I bought 50 lbs. of Sweetex at a local wholesale bakery supply place for $60 as well. I think it may have been the moderator, JanH, who posted about freezing. She said she divides into batches appropriate for her most common size cakes.

I haven't actually ever used Sweetex, but everyone seems to go Ga-Ga over it. I bought it now because California goes NO TRANS-FAT (including Sweetex) on Jan 1.

I bought 25 lbs. of Guittard dark chocolate A'peels ($45, or $1.80 lb.) at the same time as the Sweetex and thought "I'll NEVER use that much". Well, after making about a ton of chocolates and different kinds of bark for gifts, I've whittled that 25 lbs. down to about 8 lbs. (AND I've been able to use up about 10 packages of my Wilton Candy melts.)

Yes, I freeze my sweetex too, just divvy it up in ziploc bags and throw in the freezer....same with the Bettercreme.

Ahhhh, hello Cathy icon_smile.gif and yes I did find Sweetex at the C&C in Tukwila and boy was that box heavy!! icon_surprised.gif
And yeah, I freeze Bettercreme all the time but I've never froze Sweetex. So, how do you divide it? I got those big freezer bags from Costco, but do you just guess the amount in each bag?

I freeze it all the time. I use some large plastic containers that will hold about 4 - 5 pounds at a time and put those in the freezer. I use large containers in order to not have a bunch of little blocks in the freezer and running out if I don't have enough out at one time. I've frozen it for a year and it is just fine when I use it. So freeze away! thumbs_up.gif

I am too lazy to measure (its soooo messy!) so I either just plop a glob of it into a ziploc freezer bag, or if I'm feeling ambitious I'll vacuum seal it. When I need some I just let the bag sit out for a bit, measure out what I need, then throw it back into the freezer icon_smile.gif

I weigh mine out into plastic seal-able containers and put it in the freezer - that way it's pre-measured for each batch of icing and I can just pull one out and use it. I know exactly how much shortening I need for one large batch of icing that fills up my mixer and I just do it that way so it's just one time of getting my hands all messy/greasy measuring it all out and then it's there and ready when I need it! I do first line the plastic container with plastic wrap and then put the shortening in so when I'm ready to use I just pull it out of the container with the plasticwrap and dump it into my mixer and the original container is clean and ready for next time!

I am making a Christmas cake, I hope it turns out ok....I made 2 snowmen and 1 xmas tree out of fondant, and a bunch of tiny little "presents" made out of fondant as well. I am going to cover the cake in white fondant and airbrush with pearl sheen....then plop some RI on the cakeboard and sprinkle on some white shimmer to make it hopefully look like snow....I'd like to make some teeny red and blue birds out of fondant as well....wish me luck icon_smile.gif

I actually didn't make a Christmas' cake but I am making a New Year's cake since is my older son's b-day...however, for some reason I, sort of, runned out of ideas. icon_sad.gif Last year I made him a 'sexy' b-day cake and it was a hit amongst his friends LOL icon_biggrin.gif
