Which Gum Paste Recipe Or Product Do You Recommend?

Hello,
I might take some classes at my local store for making a ballerina, the only thing that I have to take es gum paste, could you please recommend what is better to use for figurines, flowers, etc.

I prefer to make my own using Nicholas Lodge's recipe (I use less powdered sugar.) I, personally, I have problems with pre-mixed gumpaste.

4 - Large Egg Whites
1 - 2 lbs 10x powdered sugar
12 - Level teaspoons Tylose
4 - Teaspoons shortening (Crisco)
Do you know if it would be ok to use meringue powder instead of the egg whites? I would love to try the recipe!
Sorry - I have been busy peeling peaches to make some pies. Yes - that is the one that I use. But, I only use about 1 1/2 - 1 3/4 # of powdered sugar. I think it makes about 2# of gumpaste. Tylose isn't that expensive. Good cake supply stores should carry it. Or you can order it online from globalsugarart.com. One container makes about two batches. I am not sure if you can use powdered egg whites or meringue powder.
I have often used the pre-made gumpaste and was too lazy to make my own. Last month I made Nick Lodge's gumpaste and boy-o-boy!!! It's the best especially to make flowers. You can roll it nice and this, you'll get a whole lot of stretch from it and I just love it. Yes, I would recommend too not to use as much powdered sugar, maybe about 3/4 of what the recipe calls for.

After you make it, you want to store it in the refrigerator overnight. I usually divide it into 4 balls and then wrap each separate. Then I get out as many balls and I will need and let it come to room temperature. I put it back in the refrig when I am finished working with it that day. Of course, make sure to wrap tightly. I also put it a zip lock bag. I have kept in the refrig for several months. Although they say gumpaste is edible, I wouldn't recommend eating it.
The one time that I tried pre-mixed gumpaste, I made several stargazer lilies several weeks before a wedding. Had them all colored and steamed and ready to go. They looked great. It got really humid in Ohio and the lilies "wilted." I had to rush at the last minute to make new ones (using Nicholas Lodge's recipe.) Entirely too much wasted work and time. Thus, I don't trust pre-mix.
