I've never used either, and I don't think Bettercreme needs to be refrigerated at all, whereas Whip 'n' Ice does before whipping. But W&I is stable at room temp for 5 days, and I don't have easy access to Bettercreme, so I'm wondering about this other stuff. It's light and tasty (not the greasier afterfeel of actual buttercream), so I'm thinking I might make a very effective filling out of it ... but wanted to ask about its versatility when compared to Bettercreme. Can I use it in the same way in most recipes? Does it compare taste-wise?

Thanks for any help!!

-Emi.

Yes - I used Whip 'n Ice last year for a Black Forest Cake and it was fabulous. Delicious, no greasy mouth feel, very luscious feeling in the mouth.

I've never tried Bettercream as we don't have it where I live but I did like the WnI very much. It was stable, would make a good filling as well as an icing and I could pipe a lovely border around the top and bottom of the cake.

I have tried them both(chocolate) .. I LOVED it , in myopinion the whipnice was just alittle bit better ,very very similar though to bettercream. I think the bettercream is sweeter. If you have access to it I say go with whipnice. I used it for both filling and covering an entire cake and held up fine if you whip it as directed .HTH

Sounds great, guys, thanks! I haven't ever done the premade fillings, except for fruit sleeves, but tried this the other day, and my kids seemed to really like it. Good to know I can use it similarly to Bettercream!

It's actually a product you have to purchase. You can Google it to find the manufacturer, who may list suppliers. I can't find it locally near me - shoot, even Bettercreme is very hard to find.

Bettercreme has to be kept in fridge or freezer before being whipped!

unfortunitly you cant use the whip n ice or bettercream or any other similar products under or with fondant... I was going to set a 6 inch tier on top of a fondant tier and do the rosettes all over the 6 inch, just the few mins it was sitting on top before I decided to scratch the idea the fondant that came in touch with the bettercream got sticky and I had to smooth powder sugar over the wet spots so it didnt get gummy. HTH

I have not personally tried the Whip-n-ice, but if it were available around here I sure would!! I've heard good things about it, and it *should* work just like the Bettercreme.

I'm glad you're able to find it, things around here are almost impossible. There are NO cake supply stores in Iowa, and I have only found ONE place where I can get Bettercreme and it's almost SEVEN dollars for a carton. RIDICULOUS!!!! icon_cry.gif
