I loved the edges I got from it! My only concern was the small air pockets on the top. Is there any way to avoid these? Other than that the technique worked great and so super easy to do, I'm going to use it more often!

I originated that method several years ago. What did you use to spread the icing on? I originally used parchment and it worked well....but the icing must be super smooth with no air bubbles in it. Later I switched to using the thick, clear vinyl that you buy off the roll at Wal-Mart or a fabric store [the kind a lot of people use for rolling fondant] and it seems to release with a more smooth finish.
I haven't used the upside down method in years now, but from time to time I still get messages from people who do. There's also a video on www.youtube.com a decorator made demonstrating it.

One thing that will help if to not move the icing back and forth wile spreading. Place a big dollop on one side and push it to the other with your spatula.
I still need to try this method!! I've tried the Viva paper towels, but I think this one will give a better finish!
