Hi,
I am not sure why this happened. I iced the cake, put in fridge, took out and covered in fondant. This was last night. Just delivered it and noticed a huge split on the side of the cake.
What happened anhow can I prevent this in future?

sounds like a structural issue. Cake is heavy and even if you dowel it the weight will still split the cake after it has settled. So next time, if it is a tiered cake, I would put in extra support. Even if it wasnt tiered, it could still split. You can fix it by either making up some RI of the same color as the fondant and 'caulk' it, or cover it with other decorations. |

You can also melt a little of the leftover fondant and a tiny bit of water in the microwave to make a paste consistance. Smooth it over the crack. Then with a hot wet spatula smooth it out. |

It was just a 10" round...not really a structural issue I don't think. Could it be because the cake was cold??? The cake sat too long after fondant was applied (24 hrs)? |

If your fondant is dried out from sitting it will sometimes crack when you transport.
I had a cake with red tiers a couple weekends ago and the red fondant was overworked. I like to never got it on the cake. There were holes and cracks everywhere. I melted the fondant and smoothed it out and you would never no thats what I did. There is a picture in my photos. 5 tier red and white cake. |
