When filling a cake, does the filling make the cake soggy? Does the filled cake need to be refrigerated? Thanks! |

It depends on your filling...for both questions. If your filling is straight buttercream, you don't need to worry about refrigerating. If your filling is perishable, like cream cheese, or something, it will need to be refrigerated. Do you have a certain filling that you're questioning? |

Unless you are using a sleeved filling, the strawberry and the pineapple are both fillings that require refrigeration.
Ganache does NOT require refrigeration.
A properly made filling will not make the cake soggy. |

I'm not sure about the pineapple filling But I recently did the other two. The ganache didn't make it soggy but my strawbery did. It depends on the kind of strawberry you use. I used fresh strawberries and with the juice that comes from them, it ended up making it really soggy to where it had fallen apart on the backside. |
