Dairy Free Hydrogenated Fat Free Receipe

Hi,
I have a friend with severe dietary requirements but when she and a couple of my other friends come to visit in a few weeks I would love to be able to make a cake which she could eat.
She is lactose intolerant, and can have virtually no saturated (hydrogenated) fats so normal dairy free cake recipes don't work. Does anyone out there have any recipes that I could try?

These recipes are vegan so there are no animal products, but some do use oil or vegan margarine.
To avoid any chance of using hydrogenated or saturated fat, use applesauce, etc. to replace any oil called for in cake recipe.
I don't think there is any frosting recipe that satisfies your requirements. Just serve with a dusting of confectioner's sugar.

I've only tried the first recipe---
Chocolate Depression Cake (TRIED THIS ONE-VERY GOOD.
1 2/3 c. flour
1 c. brown or white sugar
1/4 c. cocoa
1 tsp. baking soda
1/3 c. oil
1/2 tsp. salt
1 c. water
1/2 tsp. vanilla
1 tsp. vinegar
Grease and flour 8x8 inch pan (9x13 inch for doubled recipe). Thoroughly mix together all ingredients. Bake at 350 degrees for 30- 35 minutes. Can sprinkle powdered sugar on top while cake is hot if desired.

CHOCOLATE CRAZY/WACKY CAKE
3 c Flour
2 c Sugar
1/3 c Cocoa
1 ts Salt
2 ts Baking soda
2 tb Vinegar
2 ts Vanilla
3/4 c Oil
2 cups cold water
Sift all dry ingredients in a large bowl. Mix liquid ingredients in large jug. Pour over all and mix well. Do not beat! Pour into a greased and floured 9"x13" pan. Bake at 350 degrees for 40 minutes. Also try cupcakes, cutout cake, double-layer cake,etc.

Icing for the cake: beat the white of two eggs to a froth, then stir in half a pound of powdered sugar. Flavor with a little essence of lemon, and spread on with a knife when the cake is cold.

As for the frosting---I don't have a recipe myself, but someone on another thread was talking about a tofu icing. I believe that would work for you. Just google "silken tofu icing" and all kinds of them come up. I wish I could remember who posted it...they did it about five minutes ago.
