Pineapple Upside Down Cake

Can you make a pineapple upside down cake in round layer cake pans? I have client who needs a small cake for Sunday. She doesn't want the sheet cake.

Is this possible? Also, does anyone know if there is a pineapple upside down cake in the Cake Mix Doctor book? I misplaced my book and need the recipe badly.

I have always made mine in a 9 in layer pan. As for the book, I can't help, sorry.

Alton Brown did one in an iron skillet...claimed made it extra caramelly that way, so why not in a cake pan.

if you google...you'll find tons of recipes for this....

I always made it by sprinking brown sugar in bottom of pan about a cup or so.
then place rings of pineapple all over as many as will fit. then marischino cherry in hole of each ring. pour a little of pineapple juice in...very little..just enough to make it look sugar a bit moist.

then cover w/ yellow cake batter (from a mix).

and bake until done (toothpick test)

i suppose if making in iron skillet could start w/ plain white sugar and pineapple juice (maybe marischino as well) and cramelize it then add the rest.

hmmm...never seen or made a two layer....


but then....hmmm....could be worth a try (but not for client until sure it would work!) (i feel an experiment coming on)

I think a 2-layer pineapple upside down cake would be fantastic (I love pineapple!) I could see all the brown sugar and pineapple juice oozing out of the sides, oh ym, my mouth is watering right now. I'll be right over!

You are too funny samsgranny. I decided to go with just the one layer. This is my very first pineapple upside down cake so if my client doesn't like it I'll probably bake another for her. It looks good though. The brown sugar made it a little darker on top. Maybe I should have used light brown sugar. Oh well...you live and you learn.

While I haven't made Alton Brown's pineapple upside cake, I've made another recipe in a skillet. I start off cooking it on the stovepot then move it to the oven when you pour your cake batter in. Mine calls for brown sugar, maybe I just don't think its that dark. I've never taken a picture of one so I can't show you. In any case I'm glad it worked out for you.
