I have not made royal icing flowers since I took the classes, over two years ago, so today when I went to make some flowers for my Easter cake, it was a total disaster!! My icing broke down, which has never happened to me before, I couldn't remember how to make any of the flowers... I printed out directions from the wilton site but my daisies don't look anything like they're supposed to. The other flowers might have been ok if my icing had turned out right, I guess. I am so upset though, 'cause I spent over two hours today trying to make them, and used all my ingredients, and now I have nothing to show for it but a bunch of ugly blobs that slightly resemble flowers!! Crying or Very sad

I told dh to tell his family to not expect an Easter cake at the dinner now, but of course I am just pouting and will have to try again tomorrow.. heh heh.... I just had to vent!!

Royal icing can be tricky - I think the key is the right consistency. Keep trying - you'll get it. Do you still have your Course II book you can refer to??

Hey there, I'm a melissa too!

Did you make sure that your couplers & tips DID NOT have any type of grease or grease residue on them? That will affect the royal icing. You can boil them to thoroughly clean them.

Also, don't give up yet!!!!!!!!!!!! Laughing Just keep practicing and you'll get it!!!

I too am having the same problem with my daisies. I made a bunch last night but the centers seem very soft and poofy and the tips are very spiky. In fact the centers are so thick that I had to scoop the middle out so I could put my dot of yellow. Why are the centers so mushy looking and the tips are so spiky?

If they look watery or act like they are melting, then add a bit more powdered sugar. I had that problem trying to do the daffidils? and had to add more sugar. In fact my entire batch was that way. (this was before I colored it so adding the PS wasn't a problem) But who am I to talk, I have not done royal icing flowers since my WC2 back in....August! LOL Good Luck! Thumbs Up!

Thanks! All my stuff was brand new, so grease wasn't the issue. I think I must have added too much water, and I didn't have any extra icing sugar. Silly me. I don't have my course II book anymore, but I was able to find directions for several of the flowers online. They just didn't seem to look right!
