We all talk about cookies (decorated and undecorated), brownies, cheesecake. Why not pies guys?? icon_confused.gif I love to bake cookies and cakes. But there is such a simplicity to pies. And there are great recipes out there. I know pies aren't as popular, but hey I am young wife with husband who loves pie. Key Lime pie to be exact. He has had it all over the place. And I am proud to say that he feels mine is the best. And I know it;s not just him being my husband. A friend of our lived in Florida for most of his life. They had a Key Lime fair. And the local popular pie shop won every year. And he and his family tells me that their's is no comparison to mine. I don't make very nice cakes. My cookies are alright. But pie is the one thing I have to be proud of. And it just makes me feel like a good little wife to make a pie. So how bout it guys. How bout some pie?

I love pie and actually prefere it to cake!

I'm glad that we're getting close to pumpkin pie time, I made a couple last year for Thanksgiving and they were the bomb!!

You know I just had pumpkin pie for the first time last year. It was great!! Sme with sweet potato pie. Mmmmm. icon_razz.gif I always thought pie had to have nuts to be good. Not anymore. Pie is great in any form.

Oh yeah...Pies...yummmy!

I've just started baking pies for customers...Any help or ideas would be great!

I actually had a customer think that my lemon pie filling was from a can icon_eek.gif ....go figure..I have a lemon tree at my house, wait til they are vine ripe, pick..squeeze...make pie filling! And she thought it was canned??? Can't get any more REAL or fresh than that. I think she's used to the can and doesn't know what fresh tastes like.

How about pastries also?? I could always use some new ideas... thumbs_up.gif

My favorite pie ever is from The Elegant Farmer. It is over by Milwaukee. They bake their apple pies in a brown bag coated with butter. The pie crust is carmilized and completely orgasmic. No, I didn't mean organic. icon_biggrin.gif Has anyone ever heard of this method, or know how to do this? I would love to try, but I am deathly afraid of the combination of fire from my gas oven, butter and paper. I have renters insurance, but I don't think it covers ignorance.

Talking about pies...

It's made with mango and passionfruit (and cheesecake).....anyone know how?

I guess this really falls into the cheesecake-pie catagory

I would love to talk pie! I too, love pie over cake any day! So does the hubby. (BellaSweet, maybe our hubby's are related, pie makes mine drool! icon_smile.gif)

I am a recipe collector, so I have tons and love to share them. I swear by my pie crust and won't use any other.

I am also glad fall is here, time for cranberry, pumpkin (though I almost always use butternut or pink banana squash instead) sweet potato, apple, eggnog etc.

I am already missing the peaches and blueberries, though I keep several pies frozen in the deep freeze for later in the cold months so we can have a taste of summer.

My faves are spiced blueberry, gooseberry, shoo-fly, chess and raspberry cream.

At Thanksgiving I am required to do pie, and usually make between 11-15 the day before. Yum.

I absolutely love pie!!! Especially cream pies. I grew up in Idaho and every year I wanted a birthday pie instead of birthday cake.......icon_surprised.gif (Oops-can I say that on this forum without being pounded???? icon_wink.gif The pie I wanted was always a German Chocolate Pie. The bakery we got it from has since closed, but I've wished for years that I had their recipe. It was different then most German Chocolate pies. It had one white layer that was a creamy coconut flavor with added pecans. On top of that was a layer of chocolate with added coconut, then it was topped with whipped cream -mmmmmmmmm I'd kill for another piece of that pie!!! icon_twisted.gificon_twisted.gificon_twisted.gif It was the best German Chocolate pie I've ever eaten. Ohhhh, how I miss that pie! icon_rolleyes.gif

It's a good thing I love pie!

I didn't know that at almost 32 I would become allergic to eggs. There are a lot of great pies that need eggs, but not all of them.

My grandmother's cherry pie was always my very favorite dessert. Now that I make it, I have a few people who beg me for it. But I don't dare tell them it is the easiest dessert to make! I think a lot of people don't know of any cherry pie except with the gloppy filling. Red tart cherries with a thick juice...man, so good!

I'm all for doing some pie baking for awhile. I want to try that suggestion of using alcohol for the liquid...was that you Mike?

BellaSweet.....I'm ready for your recipe. I have a key lime recipe but it is more like cheesecake.

The best pie I ever ate was a berry pie with a cream cheese layer. I have never been able to find the recipe, if anyone has it. I ate it at Bakers Square about 15 years ago.

Oh I love cream pies and hubby loves the fruit pies! I dont get to make them often because I always have to make cakes for people. We both love shoo-fly, chess and lime !

Ok, so I am going to give away a secret. So promise not to tell tapedshut.gifshhh.gif .... the recipe I use is from a baking book. AHHHHHHH. I can't believe I said it. I don't like to tell that I cheat icon_cry.gificon_cry.gif So I will have to post it tomorrow. I am forgetting the measurement on the milk. I love the way that passionfruit one looks. MAn oh man how I would love that today.

sarahpierce, I checked out their website. That pie looks AWESOME!!! and the price is very reasonable too. I would love to find out the recipe for the brown bag. My sister make a killer Apple and if she incoporated the brown bag method with her recipe...........? Just thinking icon_wink.gif

OMG pie is awesome!! I have this great cranberry cherry pie I make during the holidays when I can get fresh cranberries. Need to find the recipe in my files and I will post it. It's sooo yummy, sweet and tart..mmm...

Yes it was. I've tried it a few times since. Not an appreciable difference. If you have a great crust your happy with stick with it.

I've got a recipe for Brown Bag Apple Pie that my neighbor gave me. I've never made it myself but it was very good. It looks a little different than the pie your talking about, her pie has a crumb topping. However, I think all you need to do is wet the outside of a large brown paper bag. Put the pie inside, staple the end shut and then cook it. She cooked her pie at 350 for 1-1/2 hours. The bag didn't burn at all. I think you can use about any apple pie recipe then just cook it inside the bag. You could give it a try.

One clue why pies are mentioned often, the name of the site is CAKE Central.

I have discovered the joy of pie making in the past couple of years, even had a few people order. But I have a confession to make-

I am afraid of pie crust. I use the frozen/refrigerated kind.

Can anyone make me an honest woman and help me make a respectable crust?

I LOVE buttermilk pie. If anyone would want to share their buttermilk pie recipe I would love them forever. I ve tried several different recipes, but can find one I like.
