Been discussed for years on here. It's just a "support" problem, not anything to do with air bubbles in your icing or anything. The dots and larger piped areas "cave in" per se when they dry.

This sounds so good - but can it be used under fondant?? I would not think so.

Yes, you can use 5 or 6 large egg whites in lieu of the meringue powder and 1st addition of water.

I don't fill mine. I use flavoured buttercreams for the filling/exterior of cakes anyway, so they are tasting that cake/icing combo by just having the swirl on top.
