Hi, Susan! I have a convection as well, and love how it bakes. No more turning pans, burned edges/bottoms, underdone middles...great!

I just lower the baking temp by 25 degrees, and set my timer ...

Hahaha! So I was airbrushing a cake that needs to be ready tomorrow. It's a Saints Super Bowl/b'day party cake, so I'm airbrushing it green to look like a football field. That's A LOT of green!
