Very light sponge cake

This cake always turns out fantastic and i rely on it for most for my cakes

Very light sponge cake

Ingredients

  • 3 eggs
  • 150g sugar
  • 150g plain flour
  • 150g soft margarine/butter
  • 1 1/2 tsp baking powder

Instructions

  1. Cream the butter and the sugar
  2. Beat the eggs in a bowl and add to the sugar and butter
  3. Sift the flour and baking powder into the mixture
  4. Bake for 20-25 mins

What size cake will this recipe make? I want to make a 14" square sponge cake but dont know how much to make. I can see on the USA chart how many cups of mixture it takes but dont know how to convert this to UK measurements.

Hi there i use a mix almost the same as this except i use self raising flour what would the difference in the sponge be between the two flours?

Hi, I also used double this recipe to make an 8" round cake (almost 3" tall).

Just one thing though, it was fully cooked and had risen beautifully but the next morning I took it out to ice - and the middle had sunken into a crater :-[ any reason for this? can someone please help me? or offer any suggestions to avoid this next time?

I have a very good, accurate oven and it was at night when everyone had already gone to bed so there were no loud noises/bangs to cause it sink...

This was a wonderful, moist cake! I doubled the recipe for 2 sq 8" pans. Bree, I can only imagine for a sheet cake, 8-10 batches. :/ LOL I'll know next week. I plan on using this recipe for a wedding cake. I'll post again :)

This is very similar to the sponge recipe for a Victoria sponge cake the only difference being I would use self rasing flour and not the baking powder.

Kenikenmaui - you can stack and use fondant on Victoria sponge and it compliments it very nicely.
