Recipe for Chocolate Caramel Shortbread Bars

Delectable and delicious, chocolate and caramel offer a winning combination sure to delight taste buds. These chocolate caramel shortbread bars are quick and easy to make and provide a tasty treat to bring to potlucks, parties and more this season.

Chocolate Caramel Shortbread Bites

1⅔ cups all-purpose flour
¾ cup butter, cold
⅓ cup white sugar
1 to 2 cups caramel, depending on desire thickness
1½ cups dark chocolate

Preheat oven to 375° F.

Combine flour, butter, and white sugar in a food processor and process until the mixture is a crumb-like texture.

Press into a prepared 9 x 9 inch pan.

Bake for 15 to 20 minutes or until golden brown. Let cool.

Once cooled, pour caramel over the base, spreading evenly. Refrigerate for 3 to 4 hours.

Melt chocolate in a microwave safe bowl for 1 to 2 minutes. Stir after 1 minute.

Once evenly melted, spread over cooled caramel.

Cool in the fridge. Once chocolate coating begins to set, cut into even squares.

These sound wonderful. Can't wait to try them. Wonder how they'll taste with milk chocolate, though. I don't care for dark chocolate. May have to try that substitution and see how it works.

You can make caramel by boiling a can of condensed milk in water for about an hour if there is no such caramel in your area. Otherwise you can use dulce de leche.

Yes, what's the recipe for the caramel? Boiling a can of condensed milk does not make a thick enough caramel for me. Plus it doesn't really taste like real caramel.

Hi there KeekiChile, boy it;s been years since I did that boiling of the condensed milk can in boiling water. Glad you reminded me of it. I agree with what you told doramoreno about not boling it long enough also don't you have to have the can always UNDER the boiling water. Making sure the can isn't 1/2 way only in the boiling water? This is what I remembered from a long time ago. And it did taste like carmel. :-) Thanks for strolling down memory lane.

Don't boil... Use a crock pot... set it on low overnight... make sure that the cans are completely covered... in the morning it is a lovely thick paste of caramel flavor...

At least that is what I do...

OK, so let me understand correctly, I get a can(or 2) of sweetened condensed milk and submerge in water in my crockpot overnight on low and in the morning I just open can and "voila" out pours caramel sauce????? I have never heard of such a thing but I am willing to try out!!! I looked in my pantry and have one can of dulce de leche and one can of sweetened condensed milk.....should I try BOTH??? I'm EXCITED!!!!! Thx gang!!!! xoxox

Yes Swagirl, that's how it's done! Be sure to remove the labels before cooking them. I have never used the crockpot method. I have boiled the cans for about 3 hours, making sure they are submerged and adding water as needed. Maybe I'm not boiling long enough. I think I'm going to try the crockpot method. Thanks guys!!

If you use your Crock Pot to make the caramel, be sure to put a layer of paper towels or a cloth in the bottom as the can will move around and you have a chance of cracking your inner pot. We make this for many of the treats we produce at Buttercup Treatery and we always get rave reviews from the desserts we serve. It is so simple and so delicious. Just put it in and leave it on overnight, it will be finished in the morning. Set on a towel to cool.

PS: We make a version of this dessert adding crushed walnuts or pecans to the topping

I have found a commercial caramel that is fabulous! Nestle makes a La Lechera product called Dulce de Leche. This is popular in Hispanic communities and is in the aisle with the baked goods. Be SURE that the can says DULCE DE LECHE! The La Lechera product for sweetened condensed milk (similar to Eagle Brand), looks almost exactly the same.

Put a layer of paper towels in the bottom of the crock pot to prevent the can from jiggling and cracking the pot. It will jump up and down with the boiling water.

Why wait for a can to boil for hours when you can make caramel in minutes?

100ml double (heavy) cream

75g unsalted butter

100g soft brown sugar

Put the lot in a saucepan and heat gently until all the sugar is dissolved. Bring to a boil, simmer for 4-5 minutes, then leave to cool.

Very easy and totally yummy!
