Chocolate Caramel Shortbread Bites
1⅔ cups all-purpose flour
¾ cup butter, cold
⅓ cup white sugar
1 to 2 cups caramel, depending on desire thickness
1½ cups dark chocolate
Preheat oven to 375° F.
Combine flour, butter, and white sugar in a food processor and process until the mixture is a crumb-like texture.
Press into a prepared 9 x 9 inch pan.
Bake for 15 to 20 minutes or until golden brown. Let cool.
Once cooled, pour caramel over the base, spreading evenly. Refrigerate for 3 to 4 hours.
Melt chocolate in a microwave safe bowl for 1 to 2 minutes. Stir after 1 minute.
Once evenly melted, spread over cooled caramel.
Cool in the fridge. Once chocolate coating begins to set, cut into even squares.
