Pineapple cake
This is sort of a compilation of recipes I’ve seen and tweaked. Its very pineapple-y. You could probably add coconut to it too and it would be good.
Ingredients
| 1 box | DH yellow cake mix |
| 1/2 cup | pineapple juice frozen concentrate |
| 1/2 cup | water |
| 1/4 cup | veg oil |
| 1/2 cup | crushed pineapples |
| 3 | eggs |
Directions
Mix everything together and bake at 350 in greased pans until done. I made about 30 cupcakes with this recipe as is.

What frosting do you use with these??
Thank you for posting this, it sounds great. I’ve started making cocktail cupcakes. I’ll try this with rum in place of the water and make a coconut frosting for it.

have to make cocnut cupcakes this week end thought i might try putting cocnut flavor into the champagne recipe and then adding cocnut on top
