Pina Colada Cake Ball Recipe
Cake balls are just the right size for satisfying that sweet tooth, and these grown-up pina colada cake balls make us want to head to the beach! Rum, coconut and pineapple provide a perfect combination of summertime sweetness in this delicious drink-inspired recipe.
Pina Colada Cake Balls
Ingredients
1 pineapple cake, cooled
1 batch rum buttercream, room temperature
14 ounces white candy melts
1 cup shredded coconut
CRUMBLE cooled cake into a large mixing bowl.
MIX in frosting 1/4 cup at a time to achieve the consistency of cookie dough.
SCOOP into balls using a small cookie scoop, about 1 tablespoon.
ROLL into round balls.
CHILL at least 2 hours. If desired, insert lollipop stick dipped in melted chocolate before chilling.
MELT candy coating according to package directions.
DIP chilled balls into coating by holding onto stick or using candy dipping forks.
COAT generously with shredded coconut, covering the entire surface. Set aside to harden.
SERVE chilled or room temperature.
