Orange Cranberry Cake Recipe

Orange Cranberry Cake

2¼ cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
2 cups dried cranberries
Grated rind of 2 oranges
1 cup buttermilk
¾ cup oil
2 eggs
1 cup orange juice
1 cup powdered sugar

Preheat oven to 350°F, and prepare a tube pan.

In a large bowl, sift together flour, sugar, baking soda, baking powder, and salt.

Stir in cranberries and grated orange rind.

Stir in eggs, oil, and buttermilk. Mix well.

Pour mixture in pan, and bake for 1 hour until cake tests done.

Remove pan from oven.

Mix together the orange juice and powdered sugar.*

Poke holes in the top of the cake with a fork, and pour the orange juice mixture over the cake until it is absorbed.

*Baker’s Tip: Put orange juice and powdered sugar in a jar or air tight container. Close and shake well to mix.

  1. Just made this cake, in a “jelly roll” type pan. Did cutouts with my larger Christmas bell cookie cutter. Will highlight top of bell with cream cheese icing sprinkled with gold sanding sugar, pipe zigzag line across lower area of bell (maybe colored with the same gold sugar)l, and then put a half of a dried cranberry on the bell clapper (probably with small dot of icing to adhere). Taking to an office Christmas party tonight. I only baked the cake for 20 minutes at 350, and it turned out perfect. The taste is unimaginable!!! I LOVE this recipe!! Thanks to whoever came up with it. It will now become a Christmas “must have” at my house each year!!!
