Mary A. Moy-Hochstetler's French Macarons

Take all the guess-work out of making macarons with this French Macaron Recipe originally in Cake Central Magazine Volume 1, Issue 1.

Ingredients
1 cup confectioners’ sugar
¾ cup almond flour
2 large egg whites, room temperature
¼ cup superfine sugar

Preheat oven to 325°F.
Line half sheet pan with parchment paper.
In a food processor, combine confectioner’s sugar and almond flour. Pulse until well combined, 30 – 40 seconds.
In a stand mixer fitted with a whisk attachment whip whites until they are foamy. Add superfine sugar and whip until stiff peaks form. Add any flavoring or coloring at this point.
When stiff peaks have formed, remove whisk and add half of the pulsed mixture to the whites. Gently fold the mixture with a rubber spatula until combined. Add remaining mixture and fold until incorporated. Do not over mix or it will deflate.
Transfer batter to a pastry bag fitted with a ½-inch round tip, and pipe ¾-inch rounds one inch apart on parchment-lined baking sheet.
Rap the sheet pan very hard on the counter to remove any peaks or bubbles.
Let stand for five minutes. Tap down any peaks that have formed on top with your finger.
Bake for five minutes, rotate and bake another five minutes.
Fill cookies with desired filling.

I failed a few times, but now that I know how to make them, I can make them in my sleep.. I bake mine at 315 for 15 minutes. And I let mine dry after piping for 40 mins, depending on how the weather is. On hot Summer days, it is quick, 20 mins. I never rotate mine. No need to rotate for as long as your oven is a good oven.

Hi! Thanks for the recommendations...I can not really make blue blue blue macarons, the color always is like Tiffany blue...almost turquoise...you have any secret?

ghasan887, the egg whites will get cooked when the cookies are baked, just like the eggs in all other baked cookies.

Superfine sugar is regular granulated sugar that has been pulsed in a food processor. If you don't want to make your own, here in the US you can buy it in the grocery store under the C&H brand as "Baking Sugar"  it comes in a pink milk carton in the sugar aisle.
