Fool proof from scratch yellow cake

I came across this recipe through a very good friend, I tweaked it and I gotta tell you I made it 3 times the first time around and came out moist crumbly and perfect each time! Please enjoy and pass along!

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 2 1/2 Tablespoons Vegetable oil
  • 1 stick butter softened
  • 1 1/2-tablespoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 3 large eggs

Instructions

    Preheat oven to 350°

    Grease (3) 9 -inch round pans.
    In mixing bowl combine all the dry ingredients and mix well.
    Add the milk,vegetable oil,butter and vanilla (and almond if chosen to) extract to dry ingredient mixture and beat with an electric mixer on medium-high speed for 3 minutes, scraping sides of bowl as needed.
    Crack eggs into measuring cup ( to avoid any shells getting into batter) and the 3 eggs to the mixing bowl and continue beating an additional 2 minutes at medium-high. Pour batter into prepared pans.

    Bake at 350° for 25 minutes (times may vary-starts with 20 min) or until a toothpick inserted near center of cake comes out clean, or until cake looks light golden brown and is not jiggly in the center of the cake..

    Cool cakes on wire racks for 15 minutes; remove from pans and cool completely.

    Us your favorite buttercream for the cake and enjoy!!

  1. This is a great recipe, but a little dry for me. I tweeked it just a bit by adding a box of vanilla pudding and wow! Perfectly sturdy cake! Baked 6 batches today and they have been stacked and ready to go. Can’t wait for everyone to try it.

  2. ok, ive tried literally like 6 yellow cake recipes and always had to resort back to the DH pound cake because sadly ive yet to find a yummier cake but i have finally found it!!! i just tried this recipe and its great! i did try what Sarahslovecakes suggested to put a box of pudding mix and it was better than the box stuff!! this one goes right into my recipe book! thanks for sharing!!!

  3. hmmm…I might have done something wrong but for me it’s a bit bland. I know its plain yellow cake but maybe a bit more vanilla would do the trick. Overall it was definitely worth a try :)

  4. I tried this cake for my son’s 6th birthday today after testing another yellow cake recipe earlier this week and not being happy with it. This cake was great! I had to double the recipe and I also added vanilla pudding to it, and it baked perfectly! Everyone loved it!

  5. Just put my cakes in the oven, I took about a 1/2 cup out to make chocolate for marble cake. Im certain it will not be enough to make 3-9″ cakes. It barely made enough for the 2 9″ cakes.

    I made 2 batches of this recipe and baked them as 2, 8-inch layers and cupcakes. They have a perfect texture and taste delicious! I’ve always had issues with yellow scratch cakes tasting like flour but this is utterly delicious.

    I’m planning to fill the cake layers with pastry cream mixed with raspberry jam & fortified with buttercream. I haven’t decided what to cover it with yet – torn between buttercream, fondant or chocolate buttercream? Will probably end up w/chocolate.

    For the cupcakes, I’m planning to fill them with pastry cream and cover w/chocolate ganache for Boston Creme Cupcakes. So good!

  7. Oh man, I to am one that did not enjoy the taste that much. I will add though, that I did put a half a pack of pudding mix in the cake. I do not know how much this affects the cake at all taste wise, but you can taste something off for sure. The cake was the perfect density though for holding fondant. If you actually do like this taste, it is a great cake.

  8. Not sure about those who do not like the taste of this cake???? As soon as the batter was mixed and I tasted it I knew it was fabulous! the batter itself was amazing! Heres what I did. I added a package of vanilla pudding. Instead of just vanilla, I added a tablespoon of coconut along with 1/2 tablespoon of vanilla bean paste. OMG! heaven. Thank you so much for sharing this recipe….I’ve always used cake box mix because I was just so unsure of making my own cake from scratch. Everyone at the birthday girl’s party raved about this cake. So, thank you! :)

  10. I made this cake and it was so good. I added the vanilla pudding mix. It was light and dense. Perfect for cutting into layers and covering in fondant.
