A good recipe for using up stale cake cut-offs I got from an old Baker in London.
Chocolate ginger sheet
Ingredients
Stale cake 700g
Hot water 500g
Brown Sugar 450g
Golden syrup { corn syrup } 450g
High ratio shortening 300g
Egg 150g
Strong bread flour 450g
Ground ginger 25g
Mixed spice 15g
Bicarb of soda 15g
Instructions
Mix stale cake and hot water to a paste blend in golden syrup , shortening and egg for 5 min. on 2nd speed.Sieve flour ,ginger,spice and soda twice blend in.
line 15” x 18” with parchment paper wit if necessary to flatten.
Bake @ 380 F or 195 C FOR 30-40 MIN.
Remove to a board and coate twice with chocolate comb scrape.
ALOW TO SET CUT INTO 15 PIECES CLING WRAP AND ENJOY!!
