1 pound semisweet chocolate, chopped
2⅓ cups heavy cream
¼ cup light corn syrup
Place chocolate in a large heatproof bowl.
Bring cream and corn syrup to a simmer over medium-high heat and pour mixture over chocolate. Do not stir; let stand until chocolate starts to melt.
Stir melted chocolate into cream until mixture is smooth. Ganache will continue to thicken after you stop stirring.
