Applesauce Cake

Applesauce cake, born from wartime economics, is a delicious spiced cake that happens to have no butter or eggs. Make this cake for National Applesauce Cake day on June 6.

Applesauce Cake

2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon cloves
1/2 cup raisins
1/2 cup chopped walnuts
1 1/2 cups unsweetened applesauce
1/2 cup canola oil
2 teaspoons pure vanilla extract
confectioners’ sugar for dusting

Spray a bundt pan with pan release and set aside. Preheat oven to 350 degrees.
Combine flour, sugar, baking soda, salt and spices.
Add raisins and nuts.
Mix in applesauce, oil and vanilla until well combined.
Pour into pan and bake for 35 minutes or until the cake tests done.
Cool in pan for 15 minutes, dust with confectioners’ sugar and serve warm.
