Moravian Spice Cake

Posted by jgifford I found this in a collection of Civil War era recipes. I've tweaked it a little since the original recipe produced a very heavy, dense cake. It works well for cupcakes also and the brown sugar makes for a smooth, lightly-crusted top which is perfect for decorating. The taste is not unusually strong, so I would suggest using a light frosting. When I asked what flavor cake they wanted they said their favorite was a cinnamon swirl cake, but I could just make it white and chocolate. I didn't have any type of recipe for a cinnamon cake so I just tweaked a white cake recipe I had, so I could surprise them with it. Everyone raved over it. I used powdered buttermilk (not much everyday use to get the real stuff, and taste the same) also used 1 gram(1 tsp) powdered food coloring with ½ oz liquid food coloring (makes for a lighter red) . This recipe will make about 3 doz. cupcakes or 2-8"/9" layers or a 9x13 and a thinner 11x10. I pair it up with Cinnamon Buttercream. Hope you like it! Perfect Red Velvet

Posted by Foxicakes I have been trying and trying to find a recipe that lived up to my expectations. One that is moist, yet dense and can stand up to being made into beautiful works of art. I also wanted the recipe to be my own. So, I borrowed from this recipe and that recipe and modified ingredient amounts and this is what I came up with. It makes 2 9inch square cakes perfectly. You should let the cake cool for atleast 30 minutes in the pan before you remove it.
