Posted by Ballymena I found this recipe to be quick and keeps the cake from getting too sweet. It sets soft but solid and there is no danger of it leaking throught your icing if using a proper dam. If you want it sweeter use milk chocolate Add 1 tsp. peppermint for chocolate mint filling. Ingredients 1/4 cup lime juice (or lemon) 2 ½ cups soymilk 1 cup sugar 5 Tbsp cornstarch 2 tsp lime (or lemon) zest (washed well) Instructions Whip all ingredients together in saucepan, and heat over med, stir constantly until thick and creamy. This is a very versatile recipe and can be adapted easily to suit different tastes/amounts needed, not to mention its SUPER easy! This recipe filled an 8 inch and a 6 inch cake. Enjoy!
