I'm not sure how well it would translate to a layer cake for decorating. If that's what you need, then I wouldn't use the marshmallows on top. (It makes it gooey & bumpy). Red Velvet Cake and Icing

Posted by brandy7909 Found this on another site and tried it out tonight, was delish! I didn't add any red food coloring (all out, oh well) and just a dollop of BC icing and it was a HIT! I used the 2 cups of sugar and 1 cup of oil method since that was a comment on the recipe and a lot of people commented that it was better this way and I have to agree! At the suggestion of the commenter I also skipped the vinegar, and just tossed the baking soda in with the flour. I guess it is your call on what to use but this is a great basic recipe. Posted by pastrygirls This is something I've been perfecting for a while now, and it's flawless. Its a basic chocolate cake, but you need to use the darkest cocoa powder you can find. When it bakes, it's almost black. The batter is very thin, and you need to till the pans at least 3./4 full. They take a long time in the oven, but are always moist.
