Shelf stable cream cheese icing

Posted by SugarQueenie I have a client who has requested a red velvet/cream cheese cake with fondant. As we all know, fondant hates the fridge and cream cheese can't stay out for more than a few hours. I came up with this recipe to meet the needs of this client. I got rave reviews and no one could tell the difference (although I could slightly). This may have been done before, but hopefully this helps someone. Ingredients Amount Ingredient 1 cup hi ratio shortening 1.5 cups shelf stable cream cheese filling 2 lbs powdered sugar 2... read more

Eggwhite Gumpaste

Posted by Kimbecupcake This is my favorite gumpaste recipe. It dries light and strong and is easy to make. The recipe is taken from the ebook "Icing Only" by Kim Knott. It is ready to use immediately if you use shortening on your hands but will be even easier to work with if you let it sit overnight in an airtight plastic container or plastic bag. The recipe makes 2.5 cups of gumpaste and works beautifully in silicon molds. The roses in the picture were shaped by hand, then when dry, dusted with Wilton pearl dust. The leaves were colored by mixing leaf green paste color... read more

Molding Chocolate Clay

Posted by Kimbecupcake Chocolate Clay is fun to use and tastes great. It only takes two ingredients but you must be careful to follow the directions carefully or else the clay will separate and you have a delicious but useless mess. The molding chocolate I used was FOLEY'S MILK CHOCOLATE WAFERS. This recipe may not work with other types of molding chocolate. (Molding chocolate has been pre-tempered so it can be used in plastic chocolate molds. It is not the same as chocolate chips or baking chocolate.) This recipe is taken from an ebook called "Icing Only" found on... read more

Christine's Orange Dreamsicle Cupcakes

Posted by LoveonCloudCupcake Everyone loves the ice cream bars? Am I right? Or am I right? Creamy vanilla and fresh orange just go together like peas and carrots, peanut butter and jelly, rice and chicken…you get my drift. These were amongst my first cupcake recipes. I tried a from "scratch" orange cake and they were basically corn muffins. I was not pleased. So for Super Bowl Sunday I made these, but at the time with just an orange cake mix and nothing else. I slowly doctored it everytime I made them and this is what i came up with. I hope you enjoy and let me know how... read more
