"Cake Scrap" Cake Recipe

Make a cake out of... a cake? Cake Central user amberhoney makes this cake with cake scraps and tops it with toasted meringue. You can customize it with your favorite add-ins, like chocolate chips, nuts, or fruit.

If you carve a lot of cakes like I do you will also be faced with the question of what to do with all the scraps. Here is a way you can ‘recycle’ them! It is a soft textured cake with a meringue topping, serve it warm, hot or cold. This is a recipe you can adapt easily to suit the flavour cake scraps you are using. Its really nice with custard, fruit or chocolate sauce, whipped cream, ice cream, or all of the above!

Yesterday’s Cake

Ingredients

  • 4 cups cake scraps – cubed roughly
  • 3 egg yolks
  • 1 cup sugar
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1.5 cups milk
  • 2 tbsp melted butter
  • 1/4 tsp vanilla

  • Meringue – 2 cups sugar (white or brown) and 3 egg whites

Instructions

    Preheat oven to 350F.

  1. Grease a 9×12 inch baking dish.
  2. Place cake scraps in the dish.
  3. Combine egg yolks and sugar. Beat 3 minutes. Add flour and baking powder, then milk and butter. Mix well and add vanilla.
  4. Pour batter over cake scraps. Bake for 30 minutes.
  5. While baking, beat egg whites and sugar for meringue, until stiff. When ‘cake’ is cooked, pipe over the top in a nice pattern. Place under broiler until golden.

This is a nice idea, I tried it tonight. Next time I will use caster sugar for the meringue, it was MAJORLY gritty. But very yummy! I read somewhere else that a good idea is to put the pieces onto kebab sticks, dip in condensed milk, roll in coconut, and put under the grill. That sounds good for next time!

Just tried out this recipe yesterday. It's a great idea. I definitely am always looking for ways to "recycle" my cake scraps. I agree with zespri though, the meringue was super grainy. I would use icing sugar next time. And probably leave out the sugar in the batter mixture. It was a little too sweet for my taste.

Good ole parfait with the cake scraps, extra filling, icing etc...and there's always great fruit, choc etc...around to add to it.   I always have baggies of the extra cake stuff and at any given time I can throw together a parfait for dessert.   We never tire of it.

I often use my scraps as crusts for cheesecakes and on top of the caramel for custards.

Great idea, will definitely try this! I've been making Cake Biscotti out of it (slice into sticks, place on cookie sheet, and bake the moisture out of it at 350F for 12-20 minutes depending on stick size) and handling it out in small samples to my customers to nosh on their way home from picking up the cake. Lotta goodwill in those scraps!
