Whipped Wedding Cake Icing

EVERY cake mom made for us 6 girls had this icing so of course it is my favorite. Mom called it ‘wedding cake icing’ however it is a whipped icing and thus too soft for making flowers etc. It takes some time to make but is well worth the effort. My favorite is to flavor it with almond extract and frost a devils food cake or dark chocolate cake.

Whipped Wedding Cake Icing

Ingredients

  • 1 CUP WHOLE milk
  • 5 TBSP CAKE flour
  • 1 CUP SALTED butter (softened)

  • 1 CUP SUPERFINE sugar
  • 1 TSP McCormick vanilla OR almond extract

Instructions

  1. PART 1:
  2. Using a wire wisk, stir the flour into the milk, adding the flour slowly to prevent any lumps from forming.
  3. Heat the flour/milk mixture on stove top (low temp) stirring with wisk CONSTANTLY until the mixture becomes thickened.
  4. COVER the pot and place it in the refrigerator to cool.
  5. PART 2: (use electric mixer)
  6. While above mixture is cooling, mix (med/high) the SUPERFINE sugar and butter together until smooth.
  7. Add extract of choice to butter/sugar and mix until blended well.
  8. PART 3:
  9. Add the COOLED flour/milk mixture to the butter/sugar mixture ONE tablespoon at a time, mixing (med/high) constantly. Allow each addition to mix in thoroughly before adding the next. Mix until nice and fluffy.
