Vanilla Bean Cream Cheese Icing

Fellow vanilla loveres will appreciate this very vanilla icing. I used salted butter, 1/2 pure vanilla extract and 1/2 artificial Clear vanilla extract to help preserve the whiteness of the icing.

Vanilla Bean Cream Cheese Icing

Ingredients

  • 1/2 Cup Butter (room temperature) 1 8 oz Package Cream Cheese (room temperature) 1 1/2 ts Vanilla 1 lb Confectioners Sugar 2 Fresh Vanilla Beans (seeded)

Instructions

Mix butter,cream cheese and vanilla until combined. Gradually add confectioners' sugar, beating until smooth. Add vanilla bean seeds and beat on medium speed to combine. Frosting should look like vanilla bean ice cream when complete.

does this stick well on the sides of the cake? I mean it isn't too runny is it? I am an amateur at the cake thing so I am not sure what works the best that doesn't have shortening in it.
I used this icing as a filling for a vanilla cake. Everyone loved it. I had never worked with fresh vanilla beans so I didn't like that part but it was worh the hard work. I also used it as a filling for molded chocolate cups. It was a hit with the crowd! Thanks for sharing.

Fresh vanilla beans can be found at many grocery stores. I have seen them at Safeway, Save Mart, Trader Joes and Costco. Totally worth it! Costco by the way has the best price I've seen. Oh, just wanted to answer the question about refrigeration- any recipe with cream cheese needs to be refrigerated. It can be left out for a few hours without any issues, but you definitely can not leave it out all day.
I thought this was better as a filling than a frosting. It was soupy for me. Also, order your vanilla beans online. I found a fabulous deal on eBay. I got enough beans to make 7 cups of vanilla extract and still have probably 10 beans left for use whereever else!
Made this today and love it. Turns out really thick and added a tiny bit of milk.
does this crust at all? I want to dye some green (poker cake) and cover the whole cake with it but then I have to cover sides/ edges with fondant...is this too thin for this type of use? thanks!!
