Snickerdoodle Cake w/Cinnamon Buttercream

This cake is delicious. It is reminiscent of my favorite cookie-the snickerdoodle. While it is not exactly like the snickerdoodle it is very close. Delicious with cinnamon buttercream!

Snickerdoodle Cake w/Cinnamon Buttercream

Ingredients

  • Cake: 1 box white cake mix 1 c whole milk 1/2 c (1 stick) butter, melted 3 large eggs 1 t vanilla extract 2 t ground cinnamon Cinnamon Buttercream: 1 stick butter, room temperature 3 3/4 c powdered sugar, sifted 3-4 T milk

Instructions

  1. Preheat oven to 350 and prepare 2 8" or 9" pans.
  2. With an electric mixer, combine cake mix, milk, melted butter, eggs, vanilla, and cinnamon. Once combined, scrape down sides of bowl and increase to medium speed to for 2-3 minutes or until well combined. Divide between prepared pans.
  3. Bake approx. 27-30 min. Cakes will be golden brown and spring back when gently pressed.
  4. Cool in pans on a wire rack for 10 min. then remove from pans and cool completely.
  5. When cool fill and ice with cinnamon buttercream.
  6. To make cinnamon buttercream:
  7. Beat butter with an electric mixer until fluffy. Add cinnamon, vanilla, and 3 T of milk, and slowly add powdered sugar. After all powdered sugar is added, increase speed to medium and beat until light and fluffy. Add additional milk as necessary to get desired consistency. You probably don't want to know.

Jen, What are the measurements for the cinnamon and vanilla?
sounds yummy.....what are the measurements for the cinnamon and vanilla for the icing, and for the vanilla and cinnamon in the cake mix...is it tablespoons or teaspoons?
The amount for the cake is teaspoon the letter T is little and for the frosting it is a big T so it is Tablespoon. I also would like to know the measurements for the cinnamon and vanilla is for the frosting..

I try out new recipes at my husband's office... they are all a bunch of cake addicts... and this one was a home run! thank you so much for posting it... it is a new favorite in our house and everywhere i take it.
Sorry...I don't know why the measurements for the cinnamon and vanilla didn't go through when I posted the recipe. I even proofread!! It is 1 teaspoon of each in the frosting. And scrumpot is correct with the teaspoon and Tablespoon. Hope you all liked it!
This cake was a hit at my office! The girls absolutely LOVED it!
I tried it out last night. The cake was ultra good! Very moist and tasty, but the BC was a bit sweet. I salted the frosting while it was mixing because I used unsalted butter and it was still came out very sweet. After leaving in the frig overnight I gave it a try again this afternoon. It was much better, the sweetness calmed down. like most cakes it took a little time for the flavors to marry. I'll be making this again! :)
Hi those of you who have made this cake, I want to make this cake with the cinnamon buttercream but I also want to try to ganache the cake. Do you think chocolate would taste ok on this?
This cake is really quite tasty, I just ate some warm from the oven and it does taste like a delicious cake version of a snickerdoodle. The only problem I had...and it is a pretty big one actually, is that it is almost TOO tender. I made the recipie twice for a 10" square pan. The first one I was able to VERY carefully remove, but the second one totally fell apart as I took it out of the pan, absolute pile of crumbs, no way to salvage it and frost it at all. I will have to make another one :(
OK... I am following up: This cake was an absolute hit at work! I had several people take TWO pieces, and some comments that this was "the best yet". So, aside from my aforementioned "cumbling" issues, it was a dang tasty cake. I have learned (at least for the big 10" square I made) to let it cool in the pan FIRST (not something I normally do) before I attempt to invert it on my cooling rack! zgreenwood: I personally think chocolate ganache is great with nearly EVERYTHING, but the cinnamon buttercream was perfect with this cake.
I was looking for a new flavor and this was it! The cake was great and so much like a Snickerdoodle! I used some leftover buttercream and added some cinnamon to it - perfection! My husband is not a huge cake eater, but I'd say at least half was eaten by him. Thanks for sharing!
ok i have made this as cupcakes. now I am going to try and use this recipe for my giant cupcake that i need to make for my sisters birthday. I'm a little scared now with reading that someones cake crumbled. I'll let you know how it comes out. Wish me luck

Can this cake be stacked?
I made this recipe for a wedding cake and everyone raved about it .... I didnt buy a box white cake no time to go out and buy it so I made a white recipe I had ..it was fantastic. Thank you I will use this again.
Can you use a cake extender with this recipe ?
