Silky Peanut Butter Filling

This is a good filling for a peanut butter or chocolate cake. I like to torte a peanut butter cake and use this and then ice it in fudge frosting. It makes enough to fill a torted 8 or 9 inch round cake. It tastes like peanut butter by itself, but on a cake it is heavenly.

Silky Peanut Butter Filling

Ingredients

  • 1/4 cup butter
  • 1/4 cup packed brown sugar
  • 1 cup whipping cream
  • 1/2 cup creamy peanut butter

Instructions

  1. In a medium saucepan melt butter then add brown sugar. Mix together, bring to a boil. Boil and stir for 30 seconds. Remove from heat and let sit uncovered in the fridge for 15 minutes or so to cool, (It can be lukewarm to proceed) While butter/sugar mix is cooling, beat the whipping cream in a chilled bowl until soft peaks form and set aside. Remove butter /sugar mixture from the fridge and add the peanut butter, beat until smooth and creamy. Add the whipped cream and then again beat on medium speed until smooth and creamy. It is ready to go between cake layers or keep it in the refrigerator until you are ready. Keep chilled.

Can this filling be used if you are planning to cover the cake in fondant? I just want to make sure that it won't spoil as the fondant cannot be refrigerated....Thanks! :)
