Pink Lemonade Cupcakes

I tried a bunch of different recipes and couldn’t ever get the taste and texture that I wanted. Pink lemonade is a delicate flavor, so in order to get the right intensity, I found the right mixture myself!

INGREDIENTS

1 white cake mix (I use BC)
3 large eggs
1 cup pink lemonade concentrate (thawed)
1/4 cup water
1 Tbsp vegetable oil

INSTRUCTIONS

Mix all ingredients together and bake at 350 for 10-15 minutes.  Ice with frosting of your choosing, being careful to not overpower the lemonade flavor.

There is a recipe for the frosting as well. I can post if your interested. These cupcakes get RAVE reviews from all who try them. Delish!

Not the hit I was hoping for. VERY strong artificial flavor. Next time I may use the basis of this recipe but instead used 1 cup of fresh pureed strawberries, fresh lemon juice etc. in place of the pink lemonade juice.

I made these and they were awesome! The only thing was that the cupcakes seperate from the cupcake liners. Any idea why this might have happenes? The cupcakes still tasted great, the presentation was just a little funny. Also, have you posted the icing recipe? I would love to try it :) Thanks!
