Pineapple Cake

I received an order from a customer for a pineapple cake. She tried to explain to me the recipe she was wanting replicated but I had no idea what she was talking about. So....I made this recipe up. It's simply fabulous. I started with a DH Pineapple Supreme cake mix. Enjoy!!!

Pineapple Cake

Ingredients

  • CAKE: 1 DH Pineapple Supreme Cake Mix 1 1/3 cups pineapple juice (see note) 1 cup flour 1 cup sugar 1/2 cup oil 1 cup sour cream 1/3 teaspoon salt 1 teaspoon vanilla extract NOTE: I drained a can of crushed pineapple (actually I ended up having to wrap it in cheese cloth and squeeze it) and reserved the pineapple to put in my icing. ICING: 1 cup butter 1/2 cup crisco 1 lb cream cheese 3 teaspoons vanilla extract 3 lbs powdered sugar reserved crushed pineapple to taste (I like it heavy)

There are no eggs in the recipe, did you omit them, or do the juice & sour cream the binders?
I would love to make this cake but I am also wondering about the eggs?
I made this cake for my nephews bday. I also was wondering about the eggs, so I used the eggs according to the package directions. Everything turned out great & it was super yummy =)
