Pecan Pie Cupcakes

These are quick and easy to make!

Ingredients

  • 1 cup chopped pecans (I toast mine first; 325º for approx. 8 min.)
  • 1/2 cup all-purpose flour
  • 1 cup packed brown sugar
  • 2/3 cup butter, melted
  • 2 eggs

Instructions

  1. 1. Preheat oven to 350º.
    2. Combine all ingredients and mix well.
    3. Spray a miniature muffin tin with non-stick cooking spray.
    4. Fill each 3/4 full.
    5. Bake in preheated oven for approx. 16 18 minutes.

These sound great! I'm not really much of a cupcake maker, so I apologize if this question is dumb, but should your sugar and butter outweigh your flour? It seems like it would just be a goopy mess. Thanks! I really want to try these!

While I didn't post this recipe, I can tell you that these muffins don't need any frosting as they are not cupcakes and so very delicious by themselves. For a little adornment, I drizzle caramel on them.

This recipe makes about 18 mini muffins. I also bake mine

It's best to use a baking spray that has flour in it (Baker's Joy) or grease and flour your tins really good. These are quite sticky, so I take them out of the tins immediately and I suggest that you never use paper liners. They are too sticky and messy. Enjoy!

These muffins are great as a gift in a jar, or served warm with ice cream.

I have this same recipe. When I was given the recipe I thought that the lady had left something off, because it was so simple. They are so simple and easy to make and TASTE SO YUMMY!!! Just watch because they can burn easily.

To those posters questioning the raito of sugar, butter, flour and no leavener.. these are like little pecan pies, not cakey.

Tried this recipe today and really like it! The first batch I didn't watch as close as I should have and got a little over done, so be carefull to not get to brown will burn quikly!

Made these the other day and I have to say, the title a little misleading. They are not "Cupcakes" more like miniature pecan pies and the are FANTASTIC!!!! You dont need any frosting and I put a whole pecan on the top as a garnish right before I put them in the oven. I will be taking these to a fall cake walk and to Christmas dinner. SUPER YUMMY!!!

These are not at all what I had expected, so with that said, I was disappointed. BUT, They are really awesome! I was expecting more of a gooey, pecan pie-like tart. these are more on the light muffin side, I did add a carmel buttercream to top them off, and have had nothing but rave reviews from everyone who ate them!! so I have to add it too my favs!!

I made these last year for all of my events and they are delicious. One of my friends hid the whole bunch of them from her family so she could eat them! They really are good and taste like a pecan pie in cupcake form. To me, they are a cross between a muffin and a cupcake. YUM!!!!

I made these and they were wonderful....I made a brown sugar buttercream frosting for mine! Gonna serve this recipe for Thanksgiving dessert...thank you for sharing.

I made these today, and they were delicious. I tripled the recipe and used my regular size cupcake pans and was able to make 24. This recipe is definitely going into my arsenal of recipes. I also melted some milk chocolate and drizzled a little on top. Thank you for posting this recipe. Would also be delicious warming them a little, and putting a nice plop of vanilla icecream on top. YUM.
