Peanut Butter Cup Filling

This is a delicious peanut butter filling, rich and creamy. This recipe is small, makes enough to fill about a 6″ layer cake. I double the ingredients for a 10″ cake. It is especially good in a chocolate cake as filling and the cake iced in Sarah Bernhardt Chocolate Glaze. I will post the glaze recipe as well.

Peanut Butter Cup Filling

Ingredients

  • 1/2 cup Brown sugar
  • 1/4 cup creamy peanut butter
  • 1/4 cup Reese’s peanut butter chips
  • 1/4 cup margarine
  • 1/4 cup milk
  • ____________________________
  • 1/2 cup powdered sugar, or a bit more.
  • 1 teaspoon Vanilla

Instructions

  1. Combine first 5 ingredients in a medium sized saucepan. Cook over medium heat, stirring constantly until mixture comes to a boil. Lower heat and cook for 1 minute. Remove from heat and allow to cool till lukewarm. When cool, scoop mixture into KitchenAid mixer bowl. Add powdered sugar and vanilla and beat on high speed till of spreading consistency. I sometimes find it takes a bit more powdered sugar to get it to spreading stage.
