Peanut Butter Buttercream

I wanted a peanut butter flavored buttercream that would come out light and fluffy, yet not be too sweet. It goes perfectly with the chocolate cake on the back of the Hershey’s cocoa can and this is exactly enough for filling and icing two 8 inch layers. I used the Smart Balance chunky peanut butter and it came out really tasty.

Ingredients

  • 1 package of Dream Whip
  • 1/2 cup Half and Half
  • 1 stick butter, softened (I used the Smart Balance Buttery Sticks which is 50% butter and 50% margerine)
  • 3/4 cup peanut butter (I used Smart Balance chunky)
  • 3 1/2 to 4 cups powdered sugar ( the true amount will be determined by the spreading consistency that you are comfortable with, as well as the humidity in the air)
  • 1T vanilla extract
  • 1 tsp butter extract

Instructions

  1. Make the Dream Whip according to package directions, omitting the vanilla. Set aside.
    Continue by creaming the softened butter with the peanut butter for 2 minutes. Scrape down sides of the bowl and whip for 1 more minute.
    Add one cup powdered sugar and mix well, then add 1/3 of the prepared Dream Whip. Continue by alternating powdered sugar and Dream Whip in this manner until both are fully incorporated. The last thing added should be powdered sugar and you should only add as much as it takes to get to a desirable consistency. This may be 1/2 cup or a full cup depending on what you like.
    Finish by adding the extracts and beating the mixture for another 2 to 3 minutes.

Half & Half is milk. You find it in the milk section of the store. They sell it in pints and quarts. You can find butter extract at WalMart now that they are carrying Wilton products or anywhere they sell Wilton products (Michael's, Joann's, Moore's). It is in bottles like vanilla comes in.

Dream Whip is a powdered whipped topping type of thing..I've found it on the top shelf at the grocery store and walmart by the Jello.

A friends daughter is getting a scholarship for soccer. I am giong to make her a soccer cake. She likes pb icing.. but the icings I've used aren't friendly to decorating. Does anyone know if this icing would hold up to decorate a character pan with? Thanks!

Flavor is great. Reminds me of a peanut butter pie. It is a little thin for decorating. I guess it would need more sugar and be a little sweeter if you needed to pipe with it.

I used heavy cream in place of half and half, and had to add extra at the end for consistency. Tasted great for filling between a chocolate layer cake, with broken Reese's Peanut butter cups.

My family said this was the best tasting cake I had made so far, and a friend requested it again this weekend!

YUMMO! Everyone loved this with my chocolate fudge cake and I had a really hard time stopping myself from sitting on the sofa with the leftover filling and a huge spoon!

Has anyone tried this with pastry pride or a different type of whipped frosting than Dream Whip? I can't seem to find this locally. Thanks! This sounds great! A friend asked me for a peanut butter cake.
