Oreo Cupcakes

I posted a picture of these cupcakes in my photos. I got the recipe from an app on my phone. I love it when you make a recipe and they turn out just like the photo! These are super yummy and I’ve gotten rave reviews! I will say that the recipe is a little different than they way I’ve made homemade batter before, but they’ve turned out everytime.

Ingredients

  • 1 stick of unsalted butter, softened
  • 1 cup of milk (I used buttermilk)
  • 2 tsp. vanilla
  • 2 1/4 cups of flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 2/3 cup sugar
  • 3 large egg whites brought to room temperature (I take them out of the fridge and put them in warm water for a few minutes)
  • 1 pkg. Oreo Cookies
  • Icing:
  • 5 Tblsp. flour
  • 1 cup milk
  • 1 tsp. vanilla
  • 1 cup (2 sticks) butter softened
  • 1 cup sugar (regular, not powdered)

Instructions

  1. Preheat over to 350. Insert cupcake liners in a regular muffin pan. Twist apart 24 oreos. Place the wafer with filling on it, filling side up in the bottom of each liner. Take the remaining wafers and cut them in half with a sharp knife, these will be used for garnishing later. If some break, don’t worry, you can crush them with the remaining oreos. Crush remaining oreos and set aside. In a large bowl, cream the butter until fluffy, about 3-5 minutes. Add the mild and vanilla and mix to combine. In a separate bowl, mix together the flowr, baking powder, and salt. Add the dry ingredients to butter mixture. Mix until integrated. Stir in sugar. With and exectric mixer on low speed, beat for 30 seconds. Turn the mixer up to medium speed and beat for 2 minutes. Add the egg whites. Beat for 2 more minutes. Stir in crushed oreos. I use an ice cream scoop to fill the liners and it usually comes out to a perfect 24 cupcakes. Bake for 20 minutes or until a toothpick comes out clean.

For the icing, In a small saucepan, whisk the flour into milk and heat, stirring constantly, until it thickens. It took about 5 minutes on high. Be careful not to burn it. Remove form heat and let it cool completely. If you are unpatient like I am, you can take the pan and place it over an ice bath. It will cool in 10 minutes or so. You might want to stir it a few times. This mixture must be completely cooled in order to work. Cream the butter and sugar together until light and fluffy approx. 3-5 minutes. Then add the cooled milk/flour mixture, and vanilla. Beat until it all combines and resembles whipped cream. Make sure to scrape down sides ocassionally. This tastes very light considering it has 2 sticks of butter. It really resembles whipped cream.

Pipe the icing on each cupcake, place oreo half in icing at an angle, you may also dust some real fine oreo crumbs over the top. Enjoy

I've thought about it as a cake as well, but I've not tried it? As for the icing, my first batch went so fast I didn't even have to think about refridgeration, lol, but my second batch, I did put in the fridge.

I just made these for fourth of July and they were super yummy! I was curious how the icing would turn out, but it was better than I expected. It does have a very similar consistency to whipped cream. Right after you make it you can still taste the graininess of the sugar, but once it sits for a little bit the sugar dissolves and it's very good. My only issue was it seemed to keep wanting to separate so I had to keep re whipping it. I used all purpose flour for the icing. Thanks!!

I used all purpose flour. I believe these cupcakes taste better after the sit for awhile. I didn't have problems with graininess, but I will say I beat the butter and sugar together for awhile! Then after I added flour mixture I beat it a long time again. :)

i tried something similar to this but i just added 1 1/2 cup of crushed oreos to a white store bought cake mix. im just a hobby baker and cake decorator and was bored and had a box of oreos and a box of white cake mix and was like hmm lets see what this taste like haha! well it was a huge hit with family and friends! now its something everyone request when im making cakes for fam parties ect. I also added about a cup of crushed oreos to the frosting. The idea of the oreo on the bottom of the cupcake is a great idea! i should try that next time! thanks for sharing btw!! :)

I saw a recipe similar to this, and some people complained that the oreos stuck to the bottom of the cupcake liner. Do you have this problem? Didn't know if I should put a little batter in first then put the oreo in? I am going to try your recipe though because it looks a lot more simple, the other one I saw looked long and confusing...and your picture looks awesome :) Also, you say "muffin" pan, is this just a cupcake pan or is a muffin pan bigger?

I didn't have problems with the Oreo sticking on the bottom. I've made these 4 times now, and they've always came out fine. A muffin pan and cupcake pan are the same for me :)

Omgosh! These are awesome! I used milk to make these and they taste soo good! Can you make this into a cake at all? I must say, make sure that icing is really light tasting because the cake itself is rich, but soo yummy! Anyone try this as a cake? thanks!

I haven't tried it as a cake, but I've been very tempted to! They are such dense cupcakes, that I feared the center would collapse if it was a whole cake. I'll get brave one day and try it though :)
