Margarita Cupcake/Cake

I was asked to share this recipe after posting pictures. This is a tweaked version of other recipes I found online. I took what I liked of several and came up with this one. It’s by far my favorite cupcake recipe. You can sub in any cocktail you like.

Ingredients

  • Cocktail Cupcake Recipe
  • 1 Box white cake mix
  • 1 1/2 cups Margarita (mix up a margarita of cocktail of choice to your liking use a cup and a half and save any extra for icing)
  • 3 egg whites
  • 2 Tbl vegetable oil
  • 1 Tbl extract or zest (depending on the flavor I use lime zest of margarita, orange extract for fuzzy navel ….you get the idea)
  • Combine all ingredients mix on low for 30 sec and high for 2 min.
  • (bake according to box instructions for size of cake or cupcakes)
  • Frosting

  • 8 oz Cream Cheese
  • 1 stick butter
  • 2 Tbl of extract used in cake
  • 2 Tbl Cocktail
  • 1/2 cup whole milk
  • 5 cups Powdered Sugar
  • (I add more sugar or cream to get desired consistency)

Instructions

  1. Cake:
    Combine all ingredients mix on low for 30 sec and high for 2 min.
    (bake according to box instructions for size of cake or cupcakes)

Frosting:
Mix all ingredients and add more sugar or milk to get desired consistency.

This may be a silly question but do you add alcohol to the margarita mix or just use the mix? Thanks....these sound yummy especially the fuzzy navel!!

I mix my drink as I would drink it (so with alcohol) then measure out the cup and 1/2 and save the rest to flavor the frosting. It's easier then including measurments for alcohol especially since some drinks have more then others this 1 and 1/2 cup rule seems to make it easy to swap in other cocktails, then you can make them to your own taste.

so lucky !! this week it's a "test new recipes week" for me haha!! today was texas white sheet cake it's still in the oven smells good !! im soooooo trying the strawberry daiquiri cake !!!!! yeiiiiiii thanks for the recipe!! i will let you know how it goes!

I tried this and was wondering about the alcohol taste. This cake is tasty! I bought premade margarita and used that, baked 3- 8 inch layers made a key lime curd and lime cream cheese buttercream. Very very good!
