i altered a banana bread recipe to make it lower calorie and lower fat. it’s absolutely delicious and tastes like you are eating something more sinful!
Try it warm with a little bit of butter
Low Cal Banana Bundt Cake
Ingredients
- 1 1/4 cups sugar
- 1/4 cup unsweetened applesauce
- 1/4 cup margarine, softened
- 2 large eggs
- 1 1/2 cups mashed bananas (about 3-4 medium)
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chopped nuts (optional)
Instructions
- 1. heat oven to 350ºF. prepare a bundt pan with cooking spray
- 2. blend sugar, applesauce and margarine on medium speed until well combined
- 3. add in eggs one at a time until well blended
- 4. add bananas, buttermilk and vanilla and beat until smooth
- 5. mix in flour, baking soda and salt until moistened. stir in nuts
- 6. pour into pan
- 7. bake about 1 hour, or until toothpick inserted in center comes out clean
- 8. cool 10 minutes. remove from pan and cool completely on wire rack
- wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days
