Posted by kellerturThis recipe is free of animal products. I've used this recipe in eggless Lemon Meringue Pie, Key Lime pie and for cake fillings.
- 1/4 cup lime juice (or lemon) 2 ½ cups soymilk 1 cup sugar 5 Tbsp cornstarch 2 tsp lime (or lemon) zest (washed well)
Whip all ingredients together in saucepan, and heat over med, stir constantly until thick and creamy. Cool to room temp before using. Approx: 8 servings
