Lemon Marble Cake
Most any pan can be used that holds one mix such as a 12×8 (1/4 sheet); 10″ round; 8″ sq; or Most any Wilton shaped pan. Maybe others:)
Lemon Marble Cake
Ingredients
- 1 package white cake mix
- 1 cup water
- 1/3 cup oil
- 3 eggs, seperated
- 1/2 cup coconut
- One fresh lemon to yield:
- 2 Tablespoons lemon peel
- 2 Tablespoons lemon juice
Instructions
- Prepare pan w/grease & flour. Turn oven on to 325 degrees.
- Blend together egg whites, cake mix, oil and water. Beat 2 minutes. Fold in coconut, juice and peel. Remove 2 cups of batter and set aside.
- In a medium bowl, beat yolks 2 minutes. Add the set aside batter.
- Layer batters into prepared pan.
- Swirl with a knife to marble.
- Bake approx. 20-30 minutes until it tests done.

I think I'm going to use this recipe for my churches Valentines dinner. Sounds like it might be a good one doubled.
And what is it I "don't want to know...." as stated at bottom of recipe. Hmmm????? Carol
is that coconut milk? flakes? or cream of coconut? I would like to make this, but not sure wh/ kind of coconut to use.
"You don't want to know" means how many calories it contains. Coconut used in this is flakes or shreds. Sorry I wasn't clear enough.
Have you tried this leaving the yolks out for a whiter cake?
I guess it helps to read the recipe before asking a question! This sounds great! I have to try it!
