Key Lime Cake

This is a very tart cake – and very easy to make. I’ve never tried to decorate it I guess you could…after the glaze soaks in a little.

Key Lime Cake

Ingredients

  • 1 1/3 Cups Granulated Sugar
  • 2 Cups All-Purpose Flour
  • 3/4 Teaspoon Salt
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1 3-Ounce Package Lime Gelatin
  • 5 Eggs
  • 1 1/3 Cups Cooking Oil
  • 3/4 Cup Orange Juice
  • 1/2 Teaspoon Vanilla
  • 1 Teaspoon Lemon Extract
  • 1/3 Cup Lime Juice

  • 1/3 Powdered Sugar
  • Zest from Limes – to taste
  • Whipped Cream and Lime Slices for Garnish

Instructions

  1. Preheat oven to 350 degrees. Grease and flour 9 X 12 pan.
  2. Place dry ingredients into mixing bowl. Add wet ingredients. Beat until well blended. Pour batter into prepared pan and bake 25 to 30 minutes. Remove cake from oven and allow to cool for 15 minutes. Prick cake all over with fork. Drizzle thoroughly with lime juice mixed with powdered sugar and lime zest. Covere and revrigerate. To serve, but into squares, top with whipped cream and garnish with lime slices.
