Key Lime

This is another one of my variations of the WASC recipe. It's very moist and delicious!

Key Lime

Ingredients

  • 2 pkgs white cake mix 2 c flour 2 c sugar 1 small pkg cheesecake pudding mix, dry 8 egg whites 2 2/3 c limeade 3 (6oz) containers key lime yogurt 1/4 c oil 1 t vanilla 1 tsp butter flavoring 1 tsp coconut 1 dram LoRann Key Lime Key Lime Curd (I can't remember the source of this recipe!) 6 tablespoons butter 1/2 c sugar 3 eggs 1 tsp key lime zest 2/3 c fresh key lime juice Over low heat, melt the butter in a saucepan. Add the remaining ingredients and whisk continuously for about 8-10 minutes or until it forms a custard. Allow to cool then pour into a jar and refrigerate. The curd will thicken considerably as it cools.

Instructions

  1. Heat oven to 325.
  2. Combine dry ingredients; throw in the rest of the ingredients. Beat 'til combined!
  3. Expect them to bake over an hour.
  4. Torte and fill with lime curd. I also like to use a mock-cheesecake filling along with the curd (JellO Cheesecake pudding mix whipped into Frostin' Pride or Bettercreme -- or Cool Whip).

I made this cake last night - (2) 10 inch rounds and 4 cupcakes, my family ate the cupcakes - WOW! This is a great tasting cake!! LOVE IT! Pairing it with a toasted coconut cream chees filling and coconut cream cheese frosting.
I made this cake for someone for Valentines day...it is fabulous!! I used a Key Lime cream cheese filling, soooo good. It is one of my absolute favorites. I will be making it again next week for my daughters Bridal shower. Thanks for this recipe, can't say enough about it!!
Is that a Tablespoon or teaspoon of vanilla? Is that coconut extract? Is the limeade concentrate or with water added? How many cups does it make?
What is 1 dram LoRann Key Lime?
I don't have access to lorann flavourings, is there something I can use to substitute?
I've tried making this with and without the LoRann key lime flavoring...it's just not the same, and there's nothing to substitute for it. Trust me. And no- LoRann's "lime" is no where near the same as the key lime. ;) I am usually not a proponent of LoRann extracts in cake mixes (I think they taste "fake"), but the key lime extract in this cake IS what makes it good, and not just kind of good, but delicious. If you can't find it in your area, I'd suggest ordering it online.
I, too, am wondering...is that coconut extract?? And where do I find limeade? Is it in the frozen juice area of the market???

Can I use this as a stacked cake (a 3 layer 14 inch with a 10 inch 3 layer on top, all topped with a chocolate fighter jet). Will it hold up to the stacking and decorating. I want to use it for a grooms cake.
