Honey & Ginger Cookies

Theese cookies are slovakian tradition. They are often made at Christmas and Easter. They are the favourite cookies in our house and they are lovely at any time of the year. Kids love to decorate them with icing and sprinkles, and when nicely iced they make very pretty christmas tree decorations.

Ingredients:


Amount Ingredient 400 g plain flour 150 g icing sugar (confectioners) 1 heaped teaspoon mixed spice (blend of cinnamon powder, ginger powder, clove powder, ground nutmeg) 1 level teaspoon bicarbonate of soda zest of 1 lemon 120 g honey 60 g butter 2 eggs, 1 extra for eggwash


Directions:

In a saucepan melt butter and honey, let it cool.
In a bowl mix together flour, sugrar, bicarbonate of soda, mixed spice, zest. Add cooled melted butter and honey and lightly wisked up eggs.
Mix well into a smooth dough. If too sticky (depends on the size of the eggs used) add a little extra flour.
Cover with a cling film and let it rest in the fridge, best over night.
The next day roll it out on a floured surface (5mm thickness) and cut out shapes of your choice. Put on a tray and give them an eggwash.
Bake in the preheated oven at 180 degrees Celsius for about 7minutes untill well risen and golden.

To make Mixed spice you can look for any number of recipes online. The one that I use is 1 tbls Cinnamon, 1 tsp coriander, 1 tsp nutmeg, 1/2 tsp ginger, 1/4 tsp allspice and 1/4 tsp cloves (all ground spices) mix and store in an air-tight container--it's best if used within two months.
