Fruit Coconut Bars

This is a recipe I found a while back but don’t really remember where it’s from. These are fruity and coconut-lious and very easy to make. Its very HANDS ON so kids can help and have fun
Fruit Coconut Bars
Ingredients
- Bar Bottom:
- 1 Cup all-pourpose FLOUR
- 1TSP BAKING POWDER
- 1/2 Cup chilled BUTTER (cut into very small cubes)
- 2 large EGGS
- 1 TBSP MILK
- 1/2 Cup JAM or PRESERVES (such as raspberry, peach, apricot, or strawberry)
- Coconut Topping:
- 2/3 Cup granulated SUGAR
- 1/4 Cup BUTTER (1/2 stick), melted
- 2 Cups shredded sweetened COCONUT
Instructions
- Preheat oven to 350 F
- Grease 8x8in square pan
- 1. In LARGE BOWL mix FLOUR and BAKING POWDER
- 2. Using a pastry blender or two knives, CUT BUTTER into the flour to form crumbs
- 3. Using a wooden spoon, STIR EGGS one ata time into the FLOUR MIX
- 4. ADD MILK (it will be a sticky dough)
- 5. SPREAD DOUGH with your hands to the corners and evenly on bottomof the pan
- 6. Spread JAM (the jam will be easier to controll the longer you play with it)
- TOPPING:
- 1. In MEDIUM BOWL MIX the SUGAR and BUTTER
- 2. STIR in COCONUT
- 3. SPREAD over the JAM (toss it evenly until fully cover then pile it on and spread with hands)
- BAKING:
- 1.BAKE until TOPPING is LIGHTLY BROWN, around 30 mins
- 2. TRANSER pan to cool on rack or if your like me and keep forgetting to take the thing, out the stove top works too :]
- 3. ALLOW to cool completely or else you will get a gooy mess… tasty but messy
- 4. CUT into square-ish bars or whatever you want
