Eggnog Cake

A family holiday tradition in my home since 1998. Easy and delicious.

Eggnog Cake

Ingredients

  • 1 (18-1/4 ounce) package of yellow cake mix
  • 2 large eggs

  • 1-1/2 cups eggnog

  • 1/4 cup (1/2 stick) butter, melted

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon rum extract

  • Your favorite chocolate or vanilla frosting

Instructions

  1. Preheat oven to 375 degrees (F).
  2. In large mixing bowl, combine all ingredients except frosting. Beat with electric mixer 4 minutes, scraping bowl occasionally.
  3. Pour batter into 2 (9 inch) cake pans that have been lined with greased and floured waxed paper. Bake for 30 minutes until toothpick comes out clean.
  4. Cool 5 minutes and then turn out onto racks to cool.
  5. Frost between layers, on top and sides. Garnish suggestion: red and green candied cherries.

I made this cake and it was delicious. I used vanilla pudding, substituted the milk with egg nog and made an egg nog flavored whipped cream. It was a big hit.

I made this as cupcakes. I added vanilla pudding and doubled the rum. I made eggnog buttercream and it perfectly balanced the extra rum. SO good! Thank you for the recipe.
