Easy Coconut Cupcakes

I made these cupcakes, filled with Cake Boss’s raspberry filling, and WBH House BC…They were DELICIOUS!

Easy Coconut Cupcakes

Ingredients

  • 1 box yellow cake mix
  • 1/3 cup oil
  • 1 cup buttermilk
  • 4 eggs
  • 3 tsp coconut extract
  • 1 cup sweetened shredded coconut

Instructions

  1. Combine everything except the shredded coconut in mixer. Mix on low for 30, then medium for 2 minutes. Add coconut and mix on low until combined. Bake at 350 for 15-20 minutes.
