Delicious Whole Wheat Carrot Cake

I found this recipe for a friend who eats no white flour. I made it from the recipe I found to test it and then modified it to what I’m posting here. I think it’s delicious and I’ve received MANY compliments on it.

Ingredients

  • 2 cups Whole Wheat Pastry Flour
  • 2 cups Brown Sugar
  • 1/4 cup wheat germ
  • 1/4 cup wheat bran
  • 2 tsp cinnamon
  • 1 tsp salt
  • 5 eggs
  • 1/2 cup canola oil
  • 1 cup unsweetened applesauce
  • 2-3 cups shredded carrots
  • 1 cup crushed pineapple (optional)
  • 1 cup walnuts (optional)
  • 1/2 cup raisins (optional)
  • 1/2 cup shredded coconut (optional)
  • 2 tsp baking soda

Instructions

  1. 1. Mix first 6 ingredients in bowl with hands, making sure there are no large lumps.
    2. Add the next 3 ingredients and stir until combined.
    3. Add shredded carrots and other optional ingredients and stir to combine..
    4. Add baking soda and gently stir until dissolved.

Preheat oven to 350. Bake for approximately 1 hour.
Makes 2 large 8″ rounds or 2 nice sized 10″ rounds.
